This exceptional Pink Bourbon lot undergoes two distinct anaerobic fermentations—first as whole cherries for 24 hours, then depulped for an additional 32 hours—before being treated with a unique "thermal shock" process to remove the mucilage.

The beans are then carefully washed with pristine spring water and slowly dried on raised beds for 8 days. Grown at 1600 masl, it offers an elegant fragrance of strawberry and orange blossom, with flavors of apricot, guava, and a vibrant pink grapefruit acidity that delivers a refined, memorable cup.
