  • Beans: Baliem blue coffee
  • History: Blue Baliem coffee seeds originated from Jamaica and emerged on the island of Papua. Grown in the Jayawijaya mountains in the Baliem Valley, all Baliem Blue coffee beans are 100% organically grown and processed by traditional farmers in West Papua, with certifications from the Indonesian Specialty Coffee Association (SCAI) and the Specialty Coffee Association of America (SCAA).
  • Altitude: 1400-2000m
  • Process: Wet processed (giling basah) carried out on the same day of the harvest. After this, the pulp, as well as the mucilage, are removed before drying the beans in the sun. This is a necessary process to reduce the moisture in the beans to 11.5%, after which they are aged for up to 8 weeks. They are then graded for size and milled in order to remove the “parchment” and “silverskins”.
  • Body: Medium bodied
  • Acidity: Low
  • Tasting notes: East Blue Mountain is thick, flavourful, and syrupy with low acidity. With a wonderful aftertaste of tropical berries, oranges, chocolate and nuts, we recommend enjoying this coffee as it is, without sugar or milk.
