*Organic Flores Yellow Cattura* is a coffee where ancient wisdom meets modern innovation, born from the volcanic soils and lush highlands of Flores, Indonesia. Grown at 1,500 meters above sea level, the trees thrive in pristine conditions—healthy, full-leaved, and well-spaced under the shelter of shade trees like eucalyptus, fig, and albizia. Farmers nurture the land organically, returning life back to the soil with dried grasses, leaves, and pulped cherry skins, ensuring a cycle of fertility and sustainability.


The craft of this coffee lies in its extraordinary fermentation. After careful handpicking, ripe cherries are sorted and introduced to a centuries-old local tradition: mince, a fermented palm juice starter culture prepared by the Manggarai people. Created from wild forest yeast, fungi, and microbes, this sweet liquid is sprayed over the cherries before they rest in sealed tanks for 240 to 360 hours of anaerobic fermentation. The process is closely monitored, with natural acidity developing to a precise balance. This delicate harmony unlocks flavors of remarkable clarity and depth.


Once fermentation is complete, the cherries are sun-dried for seven to eight weeks until they reach perfect moisture, then stored to rest and mature before being hulled and carefully prepared for export.


The result is a cup that feels both luxurious and deeply rooted in its origin. Juicy cherry brightness and rose-like florality unfold gracefully, layered with rich caramel, brown sugar, and soft marshmallow sweetness. Each sip carries the spirit of Flores—its forests, its farmers, and its traditions—expressed through a coffee of rare character and elegance.
